Classes are taught by Michelle Premura, Certified Raw & Living Foods Chef & Instructor.  Available by
appointment for private or group classes and retreats.  Accommodations are also available in our Bed &
Breakfast or Camping on the farm.  Ingredients used for both the B&B and raw food classes will be organic, from
our garden or local whenever possible.

In addition to the dates below, all classes may be scheduled on an individual, private or
group basis for an additional fee.

sizes are limited.  Advance Registration of at least 5 days, plus deposit is required so I have time to purchase &
prepare the food.  All ingredients used are organic and/or local when available.  We also offer Raw Food Chef

Rejuvenation Retreat: Food, Nature & Art

Join us for 3 or 5 days of learning, gentle cleansing, & relaxation - an ideal way to welcome the
Spring/Summer season.  This Retreat is designed for anyone wishing to
rejuvenate and regenerate
your mind, body & spirit in a comfortable, safe, and supportive environment
.  Weekend will
include beginning vegan, raw & living food preparation classes,  drawing classes, hiking, yoga,
educational films & discussions and plenty of time to relax & explore the wonders of nature in the
Catskills right here in our own backyard.   All
meals are included and will be free from gluten,
animal products (dairy, eggs, meat), and sugar.
  Ingredients used will be fresh whole foods &
juices, and organic.  After our 5 days together, you will feel refreshed, energized and
REJUVENATED.......and....you will leave with the skills, motivation and energy to begin creating a
healthier lifestyle.

Beginning Vegan Raw & Living Food Prep 101 - 3.5 hours
In this introductory course you will learn basic fundamentals that will enable you to immediately begin
incorporating healthier, whole living foods into your diet.   You will also learn basic techniques of raw food
preparation hands on as we create a meal with a variety of healthy, fast & easy recipes that use only a blender
or food processor.  We will create an appetizer, raw dressing, entrée & dessert.  The course will also cover an
overview of what is considered “raw or living” food, how & what to stock your pantry,  food combining, basic
kitchen tools & equipment, and how adding more raw foods into your diet can help maintain your ideal weight,
improve your energy, outlook, & overall health.   Come hungry - we will eat what we make.  Raw Food Chef

Intermediate Vegan Raw & Living Food Prep 102 8 hours (or two 4 hour sessions)

Take your raw experience to the next level. Learn the fundamentals of planning raw food meals, snacks &
desserts.  Class will cover the hows & whys of soaking, sprouting & dehydrating, nut mylks, breads, crackers,
cheezes & desserts.  We will prepare a full meal and ingredients used will be organic & from our garden or local

By now just about everyone has heard of the raw food diet.  But what is it really?  a crazy diet & weight loss
program, celebrity starvation tactic, new age healing fad, extreme hippie, rebellious lifestyle?  Well…….Quell
your curiosity and join us for an intro to raw foods class  where we will discuss the what, whys & hows of the
raw food diet.  Demonstrations, deelish samples, and ?'s & answers... Raw Foods may not be what you think…..

Intro:  Weight-Loss and Raw Foods - 4 hours
By popular request, I am adding this class to our regular list of on-going courses.  
The raw food diet is by far the healthiest, fastest and easiest way to naturally obtain and
MAINTAIN your ideal body weight.
And…..you do not have to be 100% raw to reap the benefits of eating a
raw food diet.  This class is designed to help individuals learn the practice of incorporating healthy eating habits
one step at a time without feeling overwhelmed by extreme restrictions.  There is
no calorie counting,
deprivation, limitations, hunger or bombarding your body with processed, chemical laden
foods.
 It’s simply a matter of learning how to prepare foods that are nutrient dense and will satisfy both your
taste buds and your appetite.  Topics covered will include:
•        Hands-on-demonstrations preparing quick, nutrient dense recipes using only a food processor & blender
•        How & what to stock your pantry and  basic kitchen tools & equipment
•        Organics – why and what – do I have to buy organic?
•        Omnivore, Vegetarian, Vegan, Raw Foodist – do I have to “be one” to loose weight & be healthy?
•        Eliminating 4 toxic ingredients in your kitchen and what to replace them with
•        Food Cravings & Proper food combining
•        Creating a meal plan that will work for you, your schedule & lifestyle
•        Intro to Cron-o-Meter – way of tracking & calculating the nutritional value of foods your eating

•        Incorporating a diet plan that will work for you lifestyle and weight loss goals
And… most importantly how to stay motivated once you get started.  Anyone can begin to feel better, lose
weight and have more energy just by making a few small changes one step at a time.

Come hungry, as you will be eating a number of deelish treats including: green smoothies, green wraps, super
salad & dressing, zucchini pasta w/marinara sauce, the infamous chocolate brownies & more. (menu subject to
change depending on availability of ingredients)  


Healthy, Sweet, Snacky, Delights for Kids 2.5 hours
Tired of trying to get your kid to eat “healthy” food?  Wondering what to make that is nutritious, quick, easy, and
that your kids will actually eat?  This class will focus on healthy, quick & deelish foods for kids.  Everything we
make will be from whole foods; no sugar, wheat, dairy.  Learn how to make a variety of kid-tested treats such as
ice cream with chocolate & berry sauce, banana whip, fruit whips, green smoothies, nut mylk & mylk shakes, &
chocolate pudding.   

Nut Mylks – 1 hour
Learn to make and sample a variety of nutritious dairy-free nut BEVERAGES including Almond, Brazil nut,
chocolate, strawberry, banana & more.  A healthy, quick, easy, economical, & fresh alternative to dairy, soy,
and rice milk.  An ideal substitute for those with lactose intolerance and great for kids.  I just taught this class for
a group of 4th & 5th graders and they loved it (especially the strawberry).  Besides just drinking as a refreshing
beverage, nut mylks can be used as a base for “creamy” soups, smoothies, & in a variety of desserts.
Nut mylk bags may be purchased for an additional $5.  

Juicing 101 – 1 hour
Learn the basics of juicing.  Course will cover fruit & vegetable juicing methods using both a juicer & a high
speed blender.  We will make and sample a variety of tasty combinations including green, sweet, savory,
detoxifying juices, and just plain tasty juices.  

Live Soups, Sauces, & Salad Dressings – 1.5 hours
Learn to make and sample a variety of living soups, sauces & salad dressings using only a blender or  food
processor. These recipes are a  quick and easy way to add loads of nutrients, vitamins, minerals and of course
flavor into your daily diet.

How to Incorporate More Fresh Greens into your diet: Green smoothies & Live Salad Dressings

1.5 hrs
This class will include demonstrations, tastings and recipes for green smoothies & live salad dressings - two
ways to incorporate more greens into your diet.  We will also discuss purchasing organic fruits & vegetables,
best tasting combinations, and some amazing facts about the benefits of adding more fresh greens to your daily
diet.  Drink one a day and you will begin to start craving fresh green – really.  Most importantly they taste
delicious.  I've taught this class to the kids at my son’s school and they loved these – even the mango parsley!  

Better than Baked Desserts – Sugar, Wheat, Dairy Free and Deelish! – 2  hours
Learn to make wheat, dairy & sugar free desserts that taste “better than baked”.  Desserts that are super easy,
fast, nutritious and delicious – what more could you ask for?  We will make & sample a variety of desserts
including, ice cream, pies, & the and the infamous chocolate brownie  Desserts are kid tested:  I teach this class
to elementary, jr. & high school kids and they all love it – especially the ice cream!  


Sprouting & Dehydrating - 3 hours
This class will focus specifically on sprouting & dehydrating a variety of foods.  We will discuss how and why to
soak & sprout various nuts & seeds, what you need to get started, and how to select a dehydrator that will work
for you.  Learn hands-on how to delicious, healthy "better than baked" sweet & savory breads, crackers, chips,
pizzas, veggie burghers  and more. (Level I or Transitioning class suggested prior)
